The method

    Butter and cocoa-dust four ramekins right into the corners, then chill them.

    Melt chocolate and butter together over barely simmering water; cool slightly.

  3. 03

    Whisk eggs, yolks and sugar to a pale ribbon, then fold in the chocolate and finally the flour.

  4. 04

    Fill the ramekins ¾ full and rest in the fridge at least 30 minutes (up to a day).

  5. 05

    Bake at 425°F for 11–12 minutes: set edges, wobbling centre. Rest one minute, invert, dust, serve immediately.
