The method

    Toast cumin seeds in olive oil until fragrant, then add onion and peppers with a good pinch of salt.

    Cook low and slow, 20 minutes, until the peppers collapse and sweeten.

  3. 03

    Add paprika and tomatoes, crush with a spoon, simmer until the sauce holds a trench when you drag through it.

  4. 04

    Make wells, crack in the eggs, cover and cook 6–8 minutes until whites set and yolks stay loose.

  5. 05

    Crumble feta over, shower with cilantro, and serve with bread straight from the pan.
